Tasty Chicken Wraps (simple version)
This recipe is for 2 people but its easy to change the amounts to serve more. You can also add more vegetables like green pepper if you like, this is the simple version and I hope to come up with a more elaborate version one day. Very quick and yummy!
2 chicken boobs (thawed)
1 Tlbs olive oil
1/4 C. red pepper (bell) chopped
2 Tlbs Fat free mozzarella cheese
2 Whole wheat tortillas
1/4 tsp. garlic powder
1/4 tsp. onion powder
Lawery's seasoning (to taste)
Nature's seasoning (to taste)
Chop chicken into small cubes. Heat frying pan with olive oil on medium heat. Add red pepper and chicken. Sprinkle garlic, onion, lawery's and natures seasonings all over the chicken. Stir well. Keep stirring and tuning over the chicken so it all gets browned. Cook until chicken is done. Spoon desired about of chicken onto a warmed tortilla and sprinkle with about 1 Tlbs of cheese. Roll up the tortilla and enjoy! Serves 2

Jewish Apple Cake
This is an old family favorite. Growing up I remember eating this tasty treat at my Grandmas.
3 C. flour
2 C. sugar
1 C. oil
4 eggs
3 tsp. baking powder
1-1/2 tsp. vanilla
1/3 C. orange juice
3 C. sliced apples
6 Tlbs. sugar
1-1/2 tsp. cinnamon
Peel and slice apples. Mix cinnamon and 6 Tlbs. sugar with the apples. In a bowl mix the 2 c. sugar, oil and eggs together. Add vanilla and orange juice. Beat. Add flour and baking powder. Beat. Grease and flour a bunt pan very well. Layer batter and apple together. Try not to have the apples touch the sides of the pan or they will stick. Bake for 1 hour at 325* . Let stand for 15 mins in the pan then turn out. Drizzle a simple glaze on top when hot.
Pumpkin Muffins
I made a few changes to this when I made it. I added cranberries for the dry fruit, I used 3/4 c. of sugar and I used grated zucchini in place of the apple sauce. To make it a little healthier use 2 eggs and 2 egg whites in stead of 3 eggs.
3/4 C. raisins (or other dry fruit)
1 C. flour-white
1-1/8 C. whole wheat flour
1/4 C. oatmeal
1 C. sugar (use 3/4 C. if you like them less sweet)
3/4 tsp. baking powder
3/4 tsp. soda
3/4 tsp. salt
3/4 tsp. cinnamon
1/2 tsp. ginger
Mix all the dry ingredients together.
3 eggs
1-3/4 C. pumpkin puree
1/2 C. apple sauce
Mix and add to the dry ingredients.
Line muffin pans, fill cups 2/3 full. Bake at 350* for 25-30 mins.
